What Is Chistorra and How Do You Cook It?
Chistorra, or txistorra, is a semi-cured Spanish sausage made from minced pork or a mix of pork and beef, seasoned with paprika and garlic and encased in a thin natural casing. Its high fat content and thin shape mean it cooks very quickly, usually in just a few minutes in a pan, on a grill, or in the oven.
It is a classic pintxos ingredient in the Basque Country and Navarra and is often served sliced on bread or alongside eggs.
Because it is semi-cured rather than fully dried, it normally needs to be cooked (check specific product information). It is perfect for a midday snack with fried eggs and rustic bread.
