Joselito pork tenderloin has a reddish appearance in different shades, from an intense plum red, through carmine to a dull vermilion, which combines with the unmistakable juiciness provided by the trimming of fine fat. White fat lines intermingle to give rise to a piece with immense flavour and fragrant aroma.
