This mountainous region, at an altitude of over 1,200 metres, provides the perfect climatic conditions – cold, dry winters and mild summers – essential for the slow, natural maturation of the ham. This traditional method, combined with the unique characteristics of the Duroc breed, results in a shoulder ham with a remarkable balance of sweet and savoury notes, a delightful aroma, and a melt-in-your-mouth texture.
