Not all olive oil is created equal, and more importantly, not all olive oil is meant to be used the same way. The biggest mistake most home cooks make is reaching for the same bottle whether they’re frying onions or finishing a plate of burrata. The Coosur Squizz Cosecha Temprana exists to fix that.
This is a early-harvest extra virgin olive oil, cold-pressed from Picual olives picked while still green at the very start of the harvest season in Jabalquinto, Jaén, Andalusia. Harvesting early means the olives are at their most intense, the resulting oil is bold, peppery, and fruity, with a characteristic pungent finish that olive oil lovers will recognise immediately. It’s also naturally higher in polyphenols and antioxidants than oils pressed from riper fruit.
The golden rule: never cook with this oil. Heat destroys the very compounds that make it special. This is your finishing oil, the bottle you reach for after the cooking is done.
Drizzle it over freshly toasted sourdough with sea salt. Pour a slow spiral over hummus or fresh tomatoes. Finish a steak, a fillet of fish, or a simple bowl of pasta just before serving. Let it pool over burrata. Add it raw to salad dressings where you want the oil to be genuinely tasted.

However, it comes from the same olive groves, same variety (picual), same Spanish region and is produced in the same way as the Graza brand. You’re just getting it more direct and without all the millions spent on branding. It is also pacakged in the same style squeezable dispensers.
We make no bones about it because the Spanish have been producing this same EVOO for centuries and Spanish chefs have been using these dispenser designs for decades.
