Aged cheese made from goat’s milk from Gran Canaria. The most celebrated of Canarian cheeses due to the high quality of the goat breed and it’s milk. This cheese is aged for a minimum of 6 months.

This is a cheese made exclusively with pasteurised milk from Canary Island goats and matured for between 4 and 12 months. This gives it a unique flavour and identity.
The location of the Canary Archipelago in the Atlantic Ocean confers numerous particularities. The orientation, altitude and topography of each island give rise to diverse microclimates, which favours a unique flora and a great variety of endemic plants. Many of them are part of the goat’s diet and this is transmitted to the cheeses, giving nuances of scents and flavours unique in the world.
Cheeses made from goat’s milk are the most appreciated of the Canarian cheeses due to the high quality of the native goat breeds and consequently of their milk, which brings more health benefits than other milks, and gives these cheeses unique qualities along with a distinct personality.
