These specially selected pigs roam freely in the vast Spanish dehesas, feasting exclusively on nutrient-rich acorns (bellotas) during the ‘montanera‘ season. This natural diet, combined with ample exercise, is crucial to developing the unique flavour and the beautiful marbling of intramuscular fat that defines top-tier Iberian hams.

Our Finca Trabacuartos shoulder ham undergoes a meticulous curing process, typically lasting over 24 months, in natural cellars. This extended maturation allows the flavours to deepen and concentrate, resulting in a rich, complex profile with a characteristic aroma and a succulent, tender texture that practically melts in your mouth. Each slice reveals a vibrant, reddish-pink hue with streaks of pearly white fat, a visual promise of the intense, nutty flavour that awaits.
