Pimentón de la Vera is a distinctive type of smoked paprika originating from the La Vera region in Extremadura, Spain.
It’s made from specific varieties of red peppers (Capsicum annum and Capsicum longum). The peppers are dried using a traditional oak-wood smoking process, which imparts a unique smoky flavor and aroma. This is the defining characteristic that sets it apart from other paprikas. After drying, the peppers are ground into a fine powder.
It has a characteristic smoky flavour, along with varying degrees of sweetness or spiciness, depending on the variety of pepper used. The aroma is intense and penetrating.
It comes in three main varieties, Dulce (sweet), Agridulce (bittersweet) and Picante (hot).
It’s a staple ingredient in Spanish cuisine, used to flavour and colour a wide range of dishes, including stews, sausages (like chorizo), and sauces.
