Hailing from the rugged landscapes of the Basque Country and Navarre, La Vasco Navarra Idiazabal is more than just a cheese; it is a culinary symbol of Northern Spain’s pastoral traditions. Produced under strict D.O.P. (Denominación de Origen Protegida) regulations, this wedge is made exclusively from the raw milk of Latxa and Carranza sheep, breeds that have grazed these mountains for millennia.

The character of this cheese is defined by its meticulous production process. Each wheel is pressed and matured for several months, allowing the flavours to intensify and the texture to develop its characteristic firmness. A light smoking process using beechwood or hawthorn gives the rind its beautiful pale amber colour and imparts a delicate, woody aroma that complements the natural sweetness of the sheep’s milk rather than overpowering it.

Upon tasting, you will find a dense, smooth texture with a complex flavour profile. It begins with notes of toasted nuts and mountain herbs, followed by a pleasant, savoury sharpness and a long, buttery finish. Keep refrigerated between 3°C and 8°C. Store the wedge in its vacuum packaging until opening. Once opened, wrap the cut surface in cheese paper or lightly oiled baking paper and place in an airtight container in the refrigerator.

For best quality, consume within fifteen to twenty days of opening.

Unopened, and kept chilled, the cheese typically keeps its best condition for several weeks up to its best‑before date. Allow the cheese to come to room temperature for at least thirty minutes before serving to enhance aroma and flavour. The smoked rind is inedible and should be removed before eating.
