Morcilla is a blood sausage quite similar to black pudding with the main exception that it is made from bovine blood as opposed to pig’s blood. In this version, the animal is slaughtered between 12 and 48 months. It is a fattened animal, hence the cebón.
This product is particularly delicate since the ingredients come from the Wagyu breed which is rich in unsaturated and polyunsaturated fatty acids.
