El Gran Cardenal Iberian Medium-Aged Mixed Cheese

El Gran Cardenal Iberian Medium-Aged Mixed Cheese epitomises Spain’s rich cheese-making tradition, offering a perfect union of pasteurised cow, sheep, and goat’s milk. This medium-aged cheese, skillfully cured for two to four months, combines the distinct character of each milk type, resulting in a cheese prized for its creamy consistency and balanced, lingering taste.

Produced using a time-honoured recipe by the renowned El Gran Cardenal artisan cheesemakers, this cheese is known for its commitment to quality and authentic Spanish flavours. The blend of milks is carefully chosen to emphasise creamy richness from cow’s milk, subtle tanginess from goat’s milk, and deep, savoury notes from sheep’s milk. This intricate process ensures that every slice retains a refined profile, with a pleasant aroma and a melt-in-the-mouth texture that appeals to both the sophisticated palate and those discovering Spanish cheese for the first time.

Medium-aged cheeses like this are an integral part of Spanish culinary culture. The curing process in wooden cellars not only develops its clean, slightly nutty taste but also provides a firm yet supple body, making it an ideal companion for an array of dishes. Whether served on a rustic board, added to vibrant salads, or enjoyed as part of a tapas selection, it offers versatility and exquisite taste.

El Gran Cardenal’s cheese is presented in wedges, vacuum-packed to preserve its optimal freshness and authentic flavour until it reaches the table. Its natural rind, not intended for consumption, guards the cheese as it develops its signature taste during curing in Medina del Campo, a region noted for producing some of Spain’s most respected cheeses. With each bite, the balance of sweetness, saltiness, and gentle acidity creates a culinary journey from the green pastures of Valladolid to the heart of every gourmet gathering.

This medium-aged treasure is ideal for those seeking a showcase cheese for entertaining or adding a Spanish flair to everyday meals. Pairing options are diverse: combine with crusty bread, drizzle with honey, or match with Iberian cured meats and robust Spanish wines for an unforgettable tasting experience. Its moderate intensity means it complements other flavours without overpowering them, allowing each ingredient to shine.

How the Spanish Enjoy El Gran Cardenal Iberian Medium-Aged Mixed Cheese

In Spain, medium-aged mixed cheese is versatile and widely loved. Commonly enjoyed with pan de pueblo (country bread), it regularly features on tapas boards alongside olives, roasted almonds, chorizo, and quince paste known as membrillo. Sliced thinly, it’s the highlight of tabla de quesos (cheese board), frequently served as both starter and dessert.

In Castilla y León, where the cheese is produced, locals often incorporate it into salads, melt it over vegetables, or simply serve it with a glass of full-bodied red wine.

For entertaining, it is presented alongside other Spanish delicacies so each guest can savour it with their preferred combination of nuts, fruits, and cured meats. The Spanish believe the cheese’s mild, well-rounded flavour profile makes it suitable for all occasions, from informal gatherings to special celebrations.
