Ortiz Atlantic White Tuna in Olive Oil (82g)

Ortiz Atlantic White Tuna is a testament to over 130 years of artisanal expertise and unwavering commitment to quality. Since 1891, five generations of the Ortiz family have perfected the art of preparing bonito del norte, the prized Atlantic white tuna that graces the tables of discerning gourmets worldwide.

This exceptional product begins its journey in the cool waters of the Cantabrian Sea (North Atlantic), where each tuna is individually line-caught during the brief summer coastal fishing season. Unlike industrial fishing methods, Ortiz employs traditional pole and line techniques with live bait, a selective approach that has been practised by Cantabrian fishermen for centuries. This time-honoured method ensures that only the finest fish are caught at their peak, whilst protecting marine ecosystems and eliminating wasteful bycatch.

The Atlantic white tuna, scientifically known as Thunnus alalunga, is distinguished by its characteristically long pectoral fins, which give it the name alalunga in Spanish, meaning long wing. This species is renowned for its pale, delicate flesh and refined flavour, setting it apart from other tuna varieties. The meat is notably tender with a subtle sweetness that has made it a favourite among chefs and home cooks alike.

Once landed, the tuna receives the same meticulous attention that has defined Ortiz’s reputation for over a century. Skilled artisans hand-prepare each fish, carefully selecting only the prime loins. The tuna is then gently cooked and packed by hand into tins, before being covered with premium olive oil. This traditional preparation method, unchanged for generations, allows the natural flavours to develop whilst the olive oil adds a silky texture and helps preserve the fish’s delicate character.

A Healthful Delicacy

Ortiz Atlantic white tuna offers impressive nutritional benefits alongside its exquisite taste. Rich in Omega-3 fatty acids, particularly EPA and DHA, this fish supports cardiovascular health by helping to reduce triglycerides and maintain healthy cholesterol levels. Studies have shown that regular consumption of Omega-3-rich fish may lower the risk of heart disease and stroke.

With an outstanding 27 grams of high-quality protein per 100 grams and absolutely zero carbohydrates, this tuna provides essential amino acids for muscle maintenance and repair. It’s naturally low in saturated fat whilst being an excellent source of vitamin B12, crucial for nervous system function and red blood cell production. The combination of superior nutrition and exceptional flavour makes this a guilt-free indulgence that nourishes both body and palate.

Commitment to Sustainable Fishing

Conservas Ortiz stands as a pioneer in responsible fishing practices, long before sustainability became a global concern. The company’s exclusive use of pole and line fishing methods significantly reduces environmental impact, protects marine reserves, and respects the natural cycles of the sea. This dedication to traditional, selective fishing ensures that future generations will continue to enjoy the bounty of the Bay of Biscay. The company’s commitment to quality and sustainability has earned it the distinction of being official suppliers to both the Vatican and Spain’s royal family, a recognition of excellence that spans decades.

How the Spanish Enjoy Atlantic White Tuna

Spaniards appreciate this tuna in its purest form, often serving it straight from the tin with just a drizzle of the preserving olive oil and perhaps a squeeze of fresh lemon.

It appears regularly in summer salads, combined with ripe tomatoes, crisp lettuce, and thinly sliced red onion, all dressed with good sherry vinegar. The classic ensalada de bonito is a staple lunch throughout coastal regions, particularly during the warmer months.

In Basque pintxos bars, you’ll find it artfully arranged on crusty bread with roasted peppers or anchovies, accompanied by a small glass of txakoli, the local white wine. Many Spanish families also prepare the hearty ensalada de patata with tuna, mixing it with boiled potatoes, hard-boiled eggs, and mayonnaise for casual summer gatherings. The key to the Spanish approach is simplicity, allowing the tuna’s delicate flavour and silky texture to shine without unnecessary embellishment.
