What is salchichón?
Salchichón is a spicy Spanish cured sausage. It is primarily made from minced pork and spiced with black pepper, garlic with some regional variations.
It is cured by being left hanging in a dry, cool environment from weeks to months. This concentrates the flavour and firms up the texture. During the curing process it may develop a white mould on the surface. This contributes to the curing process and development of the flavours.
