What is salchichón?

Salchichón is a spicy Spanish cured sausage. It is primarily made from minced pork and spiced with black pepper, garlic with some regional variations.

It is cured by being left hanging in a dry, cool environment from weeks to months. This concentrates the flavour and firms up the texture. During the curing process it may develop a white mould on the surface. This contributes to the curing process and development of the flavours.

This particular product is packaged in a protective atmosphere that allows a better separation of slices and guarantees the freshness of the product throughout its shelf life. Top quality product, with a mild and pleasant taste and no hints of acidity due to its slow curing process. Its crisp and very meaty cut demonstrates the high quality of the lean meat used. Gluten free. Easy-open package.

Ingredients

Pork (100g of this 'extra' sausage comes from 125g of meat), salt, lactose, milk proteins, soya proteins, dextrose, spices, stabilizer (diphosphates), flavouring, preservatives (potassium nitrate, sodium nitrite), antioxidant (sodium ascorbate) and colouring (carminic acid).
