Each Aire Sano Duroc shoulder ham undergoes a meticulous curing process, lasting a minimum of 8 to 10 months, in the natural drying rooms of La Puebla de Valverde, located in the province of Teruel, Aragón, Spain. This mountainous region, at an altitude of over 1,200 metres, provides the perfect climatic conditions – cold, dry winters and mild summers – essential for the slow, natural maturation of the ham. This traditional method, combined with the unique characteristics of the Duroc breed, results in a shoulder ham with a remarkable balance of sweet and savoury notes, a delightful aroma, and a melt-in-your-mouth texture.
